4 catfish fillets (about 6 oz each)

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

3 tablespoons unsalted butter, divided

2 tablespoons olive oil

Zest of 1 lemon

Juice of 2 lemons

2 tablespoons fresh parsley, chopped (for garnish)

Preparation of Catfish: Rinse the catfish fillets under cold water and pat them dry with paper towels. This helps ensure a nice sear.

    Seasoning Mixture: In a shallow dish, combine the flour, garlic powder, paprika, salt, and black pepper. Mix well.

      Coating the Fillets: Dredge each catfish fillet in the seasoned flour mixture, shaking off any excess.

        Heat the Pan: In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium-high heat until the butter is melted and bubbly.
