Ingredients
  

1 medium head cauliflower, cut into bite-sized florets

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko preferred for extra crispiness)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Olive oil spray (or additional olive oil for tossing)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.

    In a large mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

      In a separate bowl, beat the eggs until frothy.

        Dip each cauliflower floret into the egg mixture, making sure to coat it well, then roll it in the Parmesan breadcrumb mixture, pressing lightly to ensure it adheres.

          Arrange the coated cauliflower bites in a single layer on the prepared baking sheet. Lightly spray the tops with olive oil spray for extra crispiness (if not using oil, you can drizzle a bit of olive oil over them).

            Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the bites are golden brown and crispy.

              Once baked, remove from the oven and let them cool for a few minutes. Garnish with fresh chopped parsley before serving.
