6 ripe peaches, pitted and sliced

1 cup granulated sugar, divided

1 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon lemon juice

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peaches: In a large bowl, toss the sliced peaches with 1/2 cup of sugar, cinnamon, and lemon juice. Let them sit for about 10-15 minutes to release their juices.

      Make the Batter: In a separate bowl, whisk together the flour, baking powder, remaining 1/2 cup sugar, and salt. Slowly add the milk, melted butter, and vanilla extract, stirring until just combined.

        Combine in Baking Dish: Pour the batter into a greased 9x13 inch baking dish. Do not stir. Distribute the peach mixture evenly over the batter.

          Bake: Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted comes out clean.

            Serve: Allow the cobbler to cool for a few minutes. Serve warm, ideally with a scoop of vanilla ice cream on top for an extra indulgent treat.
