1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon granulated sugar

½ cup unsalted butter, cold and cubed

6-8 tablespoons ice water

2 large ripe peaches, sliced

1 cup fresh raspberries

¼ cup brown sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 egg, beaten (for egg wash)

Coarse sugar, for sprinkling

Make the Dough: In a large bowl, combine the flour, salt, and granulated sugar. Add the cold cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Ice Water: Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

      Prepare the Filling: In a separate bowl, combine the sliced peaches, raspberries, brown sugar, cornstarch, and vanilla extract. Gently toss to coat the fruit evenly. Set aside to allow the flavors to meld.

        Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
