2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

8 small corn or flour tortillas

1 medium ripe peach, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced (adjust to taste)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 avocado, sliced (for topping)

Crumbled feta or cotija cheese (optional, for garnish)

Prepare the Chicken: In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken breasts and coat them well with the spice mixture. Let it marinate for at least 20 minutes for best flavor.

    Cook the Chicken: In a grill pan or skillet over medium heat, cook the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the juices run clear. Remove from heat and let it rest for 5 minutes before slicing it into thin strips.
