Peaches and Cream Bars

For the crust:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup cold unsalted butter, cubed

1 tsp vanilla extract

1/4 tsp salt

For the cream layer:

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

For the peach topping:

2 cups fresh peaches, peeled and diced

2 tbsp granulated sugar

1 tbsp lemon juice

1 tsp cornstarch (optional, for thickening)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and greasing a 9x9-inch baking pan or lining it with parchment paper.

    Make the Crust: In a medium bowl, mix the flour, granulated sugar, and salt. Add the cubed butter and vanilla extract. Use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared baking pan. Bake in the preheated oven for about 15-18 minutes or until lightly golden. Remove and let cool.

      Prepare the Cream Layer: In a large mixing bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy. Add the vanilla extract and mix until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

        Assemble the Bars: Once the crust has cooled, spread the cream layer evenly over the crust. Place the pan in the refrigerator while you prepare the peach topping.

          Prepare the Peach Topping: In a medium bowl, combine the diced peaches, granulated sugar, lemon juice, and cornstarch (if using). Gently toss to coat the peaches evenly. Let them sit for about 10 minutes to allow the juices to release.

            Layer the Peaches: After 10 minutes, spoon the peach mixture evenly over the cream layer in the pan.

              Chill and Set: Cover the pan with plastic wrap and refrigerate the bars for at least 4 hours or overnight to allow them to set properly.

                Serve: Once chilled, remove from the refrigerator and cut into squares. Serve chilled and enjoy the refreshing, summery taste of peaches and cream!
