Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (whole or your choice)

1/2 cup creamy peanut butter

1 large ripe banana, mashed

1 large egg

1 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or dark)

1 tablespoon vegetable oil (for cooking)

Maple syrup (for serving)

Sliced bananas and extra chocolate chips (for garnish, optional)

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk them together until they are well combined and set aside.

Prepare Wet Ingredients: In another bowl, whisk together the milk, peanut butter, mashed banana, egg, and vanilla extract until smooth and creamy. If your peanut butter is thick, you may want to microwave it for 15-20 seconds to make it easier to mix.

Combine Mixtures: Pour the wet ingredients into the bowl of dry ingredients. Stir gently with a spatula or wooden spoon until just combined – be careful not to overmix; it’s okay if there are a few lumps.

Fold in Chocolate Chips: Gently fold in the chocolate chips until they are evenly distributed throughout the batter.

Heat the Skillet: Preheat a non-stick skillet or griddle over medium heat. Lightly brush with vegetable oil.

Cook the Pancakes: Pour approximately 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes on the first side or until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes on the other side, or until golden brown and cooked through.

Serve: Stack the pancakes on a plate and serve warm with maple syrup. Top with additional banana slices and chocolate chips if desired.

Enjoy!: Dig in and savor the delicious flavor combination of peanut butter, banana, and chocolate!
