Ingredients
  

1 cup rolled oats

2 cups almond milk (or any milk of choice)

2 ripe bananas, sliced

1/4 cup peanut butter (creamy or crunchy)

2 tablespoons honey or maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

A pinch of salt

Toppings: chopped peanuts, banana slices, chocolate chips, or chia seeds (optional)

Instructions
 

In a mixing bowl, combine the rolled oats, almond milk, peanut butter, honey (or maple syrup), vanilla extract, cinnamon (if using), and salt. Stir until the peanut butter is fully incorporated and the mixture is smooth.

    Layer half of the sliced bananas at the bottom of two mason jars or airtight containers.

      Pour the oat mixture evenly over the bananas in each jar.

        Top each jar with the remaining banana slices.

          Seal the jars or containers and refrigerate overnight (or at least 4 hours) to allow the oats to soak and soften.

            The next morning, give the oats a good stir and add a splash of milk if they seem too thick.

              Serve cold, topped with additional banana slices, chopped peanuts, chocolate chips, or chia seeds if desired.
