Ingredients

1 cup unsalted butter, softened

1 cup creamy peanut butter

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 ½ cups milk chocolate chips

1 cup mini peanut butter cups, cut in half

Instructions

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

In a large mixing bowl, cream together the softened butter, creamy peanut butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually incorporate the dry ingredients into the wet ingredients until just combined.

Fold in the milk chocolate chips and half of the mini peanut butter cups to the cookie dough.

Spread half of the cookie dough into the prepared baking pan, pressing it down evenly.

Sprinkle the remaining mini peanut butter cups over the layer in the pan, then dollop the remaining cookie dough on top. Use a spatula to spread it out gently, leaving some chocolate chips visible.

Bake in the preheated oven for about 25-30 minutes or until the edges are golden brown and the center is set but gooey.

Allow the bars to cool in the pan for about 10-15 minutes before slicing into squares. For even more flavor, consider a light drizzle of melted chocolate or peanut butter on top before serving.

Enjoy your ooey-gooey Peanut Butter Cup Bars warm or at room temperature!
