Ingredients

For the Brownie Layer:

1 cup unsalted butter, melted

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup cocoa powder

1/2 teaspoon salt

1/2 teaspoon baking powder

For the Cookie Layer:

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips

12 mini peanut butter cups (or regular-sized, halved)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

    Make the Brownie Layer:

      - In a large mixing bowl, combine the melted butter and granulated sugar. Mix until well combined.

        - Add the eggs and vanilla extract, whisking until smooth.

          - In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

            - Spread the brownie batter evenly in the bottom of the prepared baking dish and set aside.

              Prepare the Cookie Layer:

                - In another mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.

                  - Beat in the egg and vanilla extract until fluffy.

                    - In a separate bowl, mix the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the chocolate chips.

                      Assemble the Layers:

                        - Pour the cookie dough over the brownie layer, spreading it evenly.

                          - Gently press the mini peanut butter cups into the cookie layer, spacing them out evenly.

Bake: Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out mostly clean (some moist crumbs are okay).

Cool and Serve: Let the brownies cool in the baking dish for about 10-15 minutes, then transfer them to a wire rack to cool completely. Cut into squares and enjoy your delicious Peanut Butter Cup Stuffed Cookie Brownies!
