Ingredients

1 cup pecans, finely chopped

1 cup dates, pitted and chopped

1/2 cup almond flour

1/4 cup maple syrup

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup chocolate chips (optional, for coating)

Instructions

Place the finely chopped pecans, pitted dates, almond flour, maple syrup, vanilla extract, cinnamon, and salt in a large mixing bowl.

Mix all the ingredients thoroughly until a sticky dough forms. You can use your hands for better incorporation.

Once the mixture is well combined, chill it in the refrigerator for about 30 minutes to make it easier to handle.

After chilling, take small portions of the mixture and roll them into bite-sized balls (about 1 inch in diameter).

If you want coated balls, melt the chocolate chips in a microwave or using a double boiler. Dip each ball into the melted chocolate, ensuring it's fully coated, then place on a parchment-lined tray.

Refrigerate the chocolate-coated balls for another 15-20 minutes until the chocolate hardens.

Serve chilled or at room temperature. Enjoy your delicious pecan pie balls!
