1 cup pecans, finely chopped

1 cup pitted dates, chopped (medjool dates work best)

1/2 cup almond flour

1/4 cup maple syrup

1/4 cup coconut flour

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of sea salt

Dark chocolate chips (optional, for coating)

Prepare the Ingredients: Start by finely chopping the pecans and dates. This will ensure a smooth texture for your pecan pie balls.

    Mix Dry Ingredients: In a mixing bowl, combine the almond flour, coconut flour, chopped pecans, cinnamon, and sea salt. Stir well to blend the dry ingredients evenly.

      Combine Wet Ingredients: In another bowl, combine the chopped dates, maple syrup, and vanilla extract. Use a fork or a food processor to mash the mixture until it forms a sticky paste.

        Combine Mixtures: Gradually add the wet mixture to the dry mixture. Stir until everything is well incorporated. The mixture should be sticky but hold together well. If it's too dry, add a teaspoon of water or additional maple syrup.

          Shape the Balls: Using your hands, take small amounts of the mixture and roll them into bite-sized balls (about 1 inch in diameter). Place them on a baking sheet lined with parchment paper.

            Chill: Once all the balls are shaped, place the baking sheet in the refrigerator for at least 30 minutes to firm them up.
