For the Crust:

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

1/4 teaspoon salt

For the Cheesecake Layer:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1/4 cup sour cream

For the Pecan Topping:

1 cup pecans, chopped

1/2 cup light corn syrup

1/4 cup brown sugar, packed

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

2 large eggs

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan with cooking spray or line with parchment paper for easy removal.

    Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and salt. Mix until well combined. Press the mixture evenly into the bottom of the prepared baking pan to form a crust.

      Bake the Crust: Bake the crust in the preheated oven for 8–10 minutes or until lightly golden. Remove from the oven and let cool slightly.

        Mix Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the granulated sugar and vanilla extract, and mix until combined. Add the eggs, one at a time, mixing well after each addition, then add the sour cream and mix until smooth.

          Pour Cheesecake Layer: Pour the cheesecake filling over the cooled crust and spread it evenly.

            Bake Cheesecake Layer: Bake in the oven for 30–35 minutes, until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour.

              Prepare Pecan Topping: In a medium bowl, combine chopped pecans, corn syrup, brown sugar, melted butter, vanilla extract, and eggs. Mix everything together until well combined.

                Add Topping: After the cheesecake has cooled for an hour, carefully pour the pecan topping over the cheesecake layer, spreading it evenly.

                  Bake Again: Return the pan to the oven and bake for an additional 25–30 minutes, until the topping is set and bubbling lightly.

                    Cool and Chill: Allow the bars to cool completely at room temperature for at least 2 hours, then refrigerate for at least 4 hours or overnight before slicing.
