Ingredients
  

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup pecans, chopped

1 cup mini chocolate chips (optional)

1/2 cup corn syrup

1 teaspoon cinnamon

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-4 minutes.

      Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet mixture, mixing until just combined.

          Fold in Pecans and Chocolate Chips: Gently fold in the chopped pecans and mini chocolate chips (if using) until they are evenly distributed throughout the dough.

            Prepare the Pecan Filling: In a small bowl, mix together the corn syrup and a splash of water, then set aside.

              Scoop Dough: Using a tablespoon or cookie scoop, drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them a couple of inches apart.

                Form Wells: Using your thumb or the back of a spoon, create a small well in the center of each cookie.

                  Fill with Corn Syrup Mixture: Carefully spoon a small amount of the corn syrup mixture into the well of each cookie.

                    Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers will look soft but will firm up as they cool.

                      Cool: Once out of the oven, allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
