Ingredients
  

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 teaspoons peppermint extract

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup crushed peppermint candies (plus extra for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

      Beat in the eggs, one at a time, followed by the vanilla and peppermint extracts, mixing well to combine.

        In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

          Fold in the chocolate chips and crushed peppermint candies.

            Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Bake for 10-12 minutes, or until the edges are lightly golden. The cookies will continue to firm up as they cool.

                Remove from the oven and allow them to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

                  For an extra festive touch, sprinkle additional crushed peppermint candies on top of the warm cookies.
