1 whole chicken (about 4-5 pounds)

2 tablespoons olive oil

1 tablespoon sea salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 lemon, halved

1 head of garlic, cut in half horizontally

Fresh herbs (rosemary, thyme, or parsley), for stuffing

1 cup low-sodium chicken broth (optional, for basting)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken: Rinse the chicken under cold running water and pat it dry with paper towels, both inside and out, to ensure crispy skin.

      Season the Chicken: In a small bowl, mix together the olive oil, sea salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the chicken, including underneath the skin for maximum flavor.

        Stuff the Chicken: Place the halved lemon, garlic head, and fresh herbs inside the cavity of the chicken. This will infuse the meat with aromatic flavors while it roasts.

          Truss the Legs (optional): If desired, tie the chicken legs together using kitchen twine to help the chicken maintain its shape during roasting.

            Place in the Oven: Transfer the chicken to a roasting pan. If you’d like, add chicken broth to the bottom of the Pan to keep the environment moist.

              Roast the Chicken: Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) at the thickest part of the meat (thigh or breast). Baste the chicken with the pan juices halfway through cooking if desired.

                Rest the Chicken: Once fully cooked, remove the chicken from the oven and cover it loosely with aluminum foil. Let it rest for about 10-15 minutes to allow the juices to redistribute.
