2 ¼ teaspoons active dry yeast (1 packet)

½ cup granulated sugar, divided

¾ cup whole milk, warmed (110°F/43°C)

2 large eggs, at room temperature

½ cup unsalted butter, melted and slightly cooled

1 teaspoon pure vanilla extract

4 cups all-purpose flour, plus extra for dusting

½ teaspoon salt

Oil for frying (vegetable or canola)

Powdered sugar, for dusting (optional)

Your choice of glaze or toppings (chocolate, sprinkles, etc.)

Activate the Yeast: In a small bowl, combine the warm milk, 1 tablespoon of sugar, and the yeast. Allow it to sit for 5-10 minutes until frothy.

    Mix Wet Ingredients: In a large bowl, whisk together the eggs, melted butter, vanilla extract, and the remaining sugar until well combined.

      Combine Mixtures: Add the activated yeast mixture to the wet ingredients, mixing until combined.

        Add Dry Ingredients: In another bowl, mix together the flour and salt. Gradually add the flour mixture to the wet ingredients, stirring until a sticky dough forms.

          Knead the Dough: Transfer the dough to a lightly floured surface. Knead for about 8-10 minutes until the dough is smooth and elastic. If the dough is too sticky, add a little more flour as needed.

            First Rise: Grease a large bowl and place the dough inside, turning it to coat. Cover the bowl with a clean kitchen towel or plastic wrap. Let it rise in a warm area for about 1-1.5 hours, or until doubled in size.

              Shape the Doughnuts: Once risen, punch down the dough to release air. Roll it out on a floured surface to about ½ inch thickness. Use a doughnut cutter (or two different sized round cutters) to cut out doughnuts and holes.

                Second Rise: Place the cut doughnuts on a baking sheet lined with parchment paper. Cover with a towel and let them rise again for 30-45 minutes.

                  Heat Oil: In a deep fryer or a large, heavy pot, heat about 2-3 inches of oil to 350°F (175°C). Use a thermometer for accuracy.

                    Fry the Doughnuts: Carefully place a few doughnuts at a time into the hot oil, frying for about 60-90 seconds per side or until golden brown. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.
