Ingredients

4 medium sweet potatoes

2 tablespoons olive oil

1 teaspoon sea salt

1 teaspoon black pepper

1 teaspoon garlic powder (optional)

1 teaspoon smoked paprika (optional)

Fresh herbs (like parsley or thyme) for garnish

Optional toppings: Greek yogurt, crumbled feta, chopped chives, or your favorite nut butter

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C).

Prepare Sweet Potatoes: Wash and scrub the sweet potatoes under running water to remove any dirt. Pat them dry with a towel.

Poke Holes: Using a fork, poke several holes around each sweet potato to allow steam to escape while baking.

Oil and Season: Rub the sweet potatoes with olive oil, then sprinkle with sea salt, black pepper, garlic powder, and smoked paprika (if using) to enhance the flavor. Make sure they are evenly coated.

Bake Sweet Potatoes: Place the sweet potatoes directly on the oven rack or on a baking sheet lined with parchment paper. Bake for about 45-60 minutes, or until the skin is crispy and a fork easily pierces the flesh.

Check for Doneness: To check if they are done, insert a fork or knife; it should slide in easily.

Rest and Serve: Once baked, remove the sweet potatoes from the oven and let them cool for 5-10 minutes. Split them open lengthwise and fluff the insides with a fork.

Add Toppings: Top with your favorite toppings like Greek yogurt, crumbled feta, chopped chives, or a drizzle of nut butter for extra flavor.

Enjoy: Garnish with fresh herbs for added color and flavor, then serve warm.
