2 cups all-purpose flour

2 cups granulated sugar

1 cup light brown sugar, packed

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup vegetable oil

1/2 cup unsweetened applesauce

4 large eggs

3 cups finely grated carrots (about 3-4 medium carrots)

1 cup crushed pineapple, drained

1/2 cup chopped nuts (walnuts or pecans) - optional

1 cup raisins - optional

For Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

Zest of one orange (for an extra zing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, light brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

      Mix Wet Ingredients: In another bowl, combine the vegetable oil, applesauce, and eggs. Whisk until all ingredients are fully incorporated.

        Combine Mixtures: Gradually add the wet ingredients into the dry mixture, stirring until just combined. Be careful not to overmix.

          Add Carrots & Extras: Gently fold in the grated carrots, crushed pineapple, nuts (if using), and raisins (if using) until fully distributed throughout the batter.

            Bake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
