Ingredients

1 cup crushed graham crackers

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1 can (8 oz) crushed pineapple in juice, drained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 cup whipped topping (such as Cool Whip)

1/2 teaspoon vanilla extract

1/2 cup shredded coconut

Fresh pineapple chunks for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers, granulated sugar, and melted butter. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of an 8x8-inch baking pan to form the crust. Bake for 10 minutes, then remove and allow to cool.

Make the Creamy Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and continue to mix until well combined.

Incorporate Pineapple and Topping: Gently fold the drained crushed pineapple, whipped topping, and vanilla extract into the cream cheese mixture until well blended and creamy.

Spread the Filling: Pour the creamy filling over the cooled crust, smoothing it out evenly with a spatula.

Add Coconut: Sprinkle the shredded coconut evenly over the top of the bars.

Chill: Cover the pan with plastic wrap or a lid and refrigerate for at least 4 hours or until set.

Serve & Garnish: Once set, cut into squares. If desired, garnish each bar with fresh pineapple chunks before serving.
