1/2 cup shredded coconut (toasted, optional)

1/4 cup chopped walnuts or pecans (optional)

Fresh pineapple slices and mint leaves for garnish

Instructions
 

Prepare the Base:

    - In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch square pan to form a crust. Chill in the refrigerator for about 20 minutes.

      Make the Pineapple Filling:

        - In a separate bowl, drain any excess liquid from the crushed pineapple. In another bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, mixing until the cream holds stiff peaks.

          Combine Pineapple and Cream:

            - Fold the drained pineapple into the whipped cream gently, ensuring that it is well incorporated but not deflated.

              Assemble the Dessert:

                - Remove the crust from the refrigerator. Spread the pineapple cream mixture evenly over the chilled crust. If using, sprinkle the toasted shredded coconut and chopped walnuts or pecans on top.
