Ingredients

2 cups fresh pineapple chunks (frozen for extra slushiness)

2 cups fresh strawberries, hulled and sliced (frozen for extra slushiness)

1/2 cup coconut water or sparkling water

2 tablespoons honey or maple syrup (adjust to taste)

Juice of 1 lime

Ice cubes (if using fresh fruit)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Fruit: If your pineapple and strawberries are not frozen, chop them into chunks and place them in the freezer for about 2 hours until frozen. This helps achieve the perfect slushy texture.

Blend Pineapple: In a blender, combine the frozen pineapple chunks, coconut water, honey (or syrup), and half of the lime juice. Blend until smooth and frothy. You may need to add a little more coconut water to facilitate blending. Scoop the mixture into a large glass and set aside.

Blend Strawberries: Rinse the blender, then add the frozen strawberries, the remaining lime juice, and a splash of coconut water. Blend until smooth. Again, adjust the consistency with more liquid if needed.

Create the Swirls: In your serving glasses, carefully pour the pineapple slush first, filling it halfway. Then, gently spoon the strawberry slush on top of the pineapple slush. Using a straw or skewer, swirl the two layers together for a beautiful marbled effect.

Serve: Add ice cubes if you like your slushies extra cold and refreshing. Garnish with fresh mint leaves if desired. Straws are perfect for enjoying the swirls!
