Ingredients
  

1 lb ground beef or turkey

1 medium onion, finely chopped

2 cloves garlic, minced

2 cups frozen mixed vegetables (peas, corn, carrots)

1 can (10.5 oz) cream of mushroom soup

1 cup milk

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

4 medium potatoes, peeled and sliced thin

1 cup shredded cheddar cheese

1 tablespoon olive oil

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the meat: In a large skillet over medium heat, add olive oil. Once hot, add chopped onions and minced garlic, sautéing until onions are translucent. Add ground beef or turkey, cooking until browned. Drain excess fat if needed.

      Mix in veggies: Add the frozen mixed vegetables, cream of mushroom soup, milk, Worcestershire sauce, thyme, salt, and pepper. Stir until everything is well combined and heated through. Remove from heat.

        Prepare the potatoes: In a greased 9x13-inch baking dish, layer half of the sliced potatoes on the bottom.

          Add meat mixture: Spread the meat and vegetable mixture evenly over the layer of potatoes.

            Top with remaining potatoes: Lay the remaining potato slices on top of the meat mixture, overlapping them slightly for an even coverage.

              Cheesy goodness: Sprinkle the shredded cheddar cheese over the top layer of potatoes.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

                  Cool and serve: Let the pie sit for about 5-10 minutes before slicing and serving. Enjoy your hearty Poor Man's Pie!
