4 large russet potatoes, peeled and thinly sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh chives, for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until they become translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant. Remove from heat.

      Prepare the Cream Mixture: In a mixing bowl, combine the heavy cream, whole milk, dried thyme, paprika, salt, and pepper. Whisk until well blended.

        Layer the Ingredients: In a greased 9x13-inch baking dish, layer half of the sliced potatoes evenly on the bottom. Sprinkle half of the sautéed onions and garlic over the potatoes, then top with half of the shredded cheddar cheese. Drizzle a portion of the cream mixture over this layer.

          Repeat Layers: Repeat the layering process with the remaining potatoes, onions, garlic, cheddar cheese, and drizzle the remaining cream mixture on top. Finish by sprinkling the grated Parmesan cheese over the entire dish.
