Ingredients

3 large potatoes, peeled and cut into strips

1 cup grated cheese (preferably a mix of mozzarella and smoked gouda)

1/2 cup all-purpose flour

1/2 cup breadcrumbs (preferably panko for extra crunch)

2 large eggs, lightly beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

Fresh parsley, chopped (for garnish)

Oil for frying

Instructions

Pre-cook the Potatoes: Boil the cut potato strips in a large pot of salted water for about 5-7 minutes until slightly tender but not fully cooked. Drain and let them cool.

Prepare the Cheese Mixture: In a bowl, mix together the grated cheese, garlic powder, onion powder, paprika, black pepper, and salt. Set aside.

Breading Station: Set up a breading station with three separate bowls: one with flour, one with the beaten eggs, and one with breadcrumbs.

Assemble the Sticks: Take a cooled potato strip, dip it into the flour to coat, then into the beaten eggs, and finally into the breadcrumbs. Gently press the breadcrumbs to ensure they stick.

Stuff with Cheese: Before sealing the last layer of breadcrumbs, make a small indentation in the center of the potato stick and fill it with the cheese mixture. Enclose the mixture by ensuring the potato is tightly formed. Repeat this with the remaining strips.

Heat Oil for Frying: In a deep frying pan, heat about 1-2 inches of oil over medium heat until it reaches around 350°F (175°C).

Fry the Potato Sticks: Carefully place the potato sticks into the hot oil in batches, ensuring not to overcrowd the pan. Fry until they are golden brown and crispy, about 4-6 minutes. Turn them halfway for an even crust.

Drain and Serve: Once golden, remove the sticks with a slotted spoon and let them drain on a paper towel-lined plate. Garnish with chopped parsley.

Enjoy: Serve hot with your favorite dipping sauce, such as homemade sour cream or a spicy aioli.
