4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a vegan option)

1 tsp dried thyme

1 tsp smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

1 cup shredded cheese (cheddar or dairy-free alternative)

Fresh chives, chopped, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the diced potatoes to the pot, followed by the vegetable broth, thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.

      Once the potatoes are cooked, use an immersion blender to puree the soup until smooth (or transfer to a regular blender in batches). For a chunkier texture, reserve some potato pieces before blending and stir back into the soup later.

        Stir in the heavy cream (or coconut milk) and heat through, adjusting seasoning with more salt and pepper if needed.
