Ingredients

1 sheet of frozen puff pastry, thawed

1 egg (for egg wash)

1 cup assorted fresh fruits (strawberries, blueberries, kiwi, raspberries)

1 cup heavy cream

1/2 cup lemon curd (store-bought or homemade)

2 tablespoons powdered sugar

Fresh mint leaves (for garnish)

Instructions

Prepare Puff Pastry:

    - Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

      - Roll out the puff pastry on a lightly floured surface to smooth out any creases. Cut the pastry into 4 equal squares or circles, depending on your preference.

        - Place the pastry pieces on the prepared baking sheet.

          Create Pastry Shells:

            - Using a sharp knife, lightly score a smaller square or circle inside each pastry square, about 1/2 inch from the edge. Be careful not to cut all the way through — this will create a border.

              - Brush the outer edges with beaten egg to give a nice golden color after baking.

                - Prick the center of each pastry with a fork to prevent it from puffing up too much.

                  Bake the Pastry:

                    - Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed. Allow to cool completely on a wire rack.

                      Make Lemon Curd Whipped Cream:

                        - In a mixing bowl, add the heavy cream and powdered sugar. Whip using a hand mixer or stand mixer until soft peaks form.

                          - Gently fold in the lemon curd until well combined, being careful not to deflate the whipped cream.

                            Assemble the Tarts:

                              - Once the pastry shells are cool, gently press down the center of each to create a well for the filling.

                                - Spoon a generous amount of lemon curd whipped cream into the center of each pastry shell.

                                  - Decorate with fresh fruit on top of the whipped cream, arranging it creatively.

                                    Serve:

                                      - Garnish with fresh mint leaves for a pop of color and added freshness.

Enjoy your delightful puff pastry fruit tarts with a zesty twist of lemon curd whipped cream!
