2 cups all-purpose flour

1 ½ cups granulated sugar

1 cup canned pumpkin puree

½ cup vegetable oil

4 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

2 teaspoons ground cinnamon

1 teaspoon ground nutmeg

½ teaspoon ground ginger

½ teaspoon salt

½ teaspoon baking soda

½ cup chopped walnuts (optional)

Cream cheese frosting (for serving)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and spices (cinnamon, nutmeg, ginger). Set aside.

      In another bowl, combine the pumpkin puree, sugar, oil, eggs, and vanilla extract. Mix until well blended.

        Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. If using, gently fold in the chopped walnuts.

          Pour the batter into the prepared baking pan and spread it evenly.

            Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

              Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
