1 cup all-purpose flour

1/2 cup powdered sugar

1/2 cup unsalted butter, softened

1/2 teaspoon vanilla extract

1 (8 oz) package cream cheese, softened

2 cups powdered sugar

1 cup canned pumpkin puree

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

    In a medium bowl, combine the flour, 1/2 cup powdered sugar, softened butter, and 1/2 teaspoon vanilla extract. Mix until a soft dough forms.

      Press the dough evenly into the bottom of the prepared baking dish to create the crust layer.

        In a large mixing bowl, beat the softened cream cheese until smooth.

          Gradually add the 2 cups powdered sugar and mix well until fully combined.

            Stir in the pumpkin puree, eggs, remaining 1 teaspoon vanilla extract, cinnamon, nutmeg, and salt. Mix until the filling is well-combined and smooth.

              Pour the pumpkin filling over the crust in the baking dish.

                Bake in the preheated oven for 40-45 minutes, or until the edges are golden and the center is just set but still slightly gooey.

                  Allow the bars to cool completely in the pan on a wire rack. Once cooled, dust with additional powdered sugar if desired before cutting into squares.
