Ingredients

1 cup ripe bananas (about 2-3 bananas), mashed

1 cup canned pumpkin puree

3/4 cup honey or maple syrup

1/4 cup unsweetened apple sauce

1/3 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 cup rolled oats

1 1/2 cups whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans), optional

1/4 cup chocolate chips, optional

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it with cooking spray.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, honey (or maple syrup), applesauce, oil, eggs, and vanilla extract. Mix well until all the ingredients are smoothly combined.

Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. Stir until evenly combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.

Fold in Optional Ingredients: If you’re using nuts or chocolate chips, gently fold them into the batter until evenly distributed.

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full to allow for rising.

Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy your Pumpkin Spice Banana Oat Muffins warm or at room temperature. They make for a delightful breakfast or snack!
