1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup unsalted butter, melted

1 cup canned pumpkin puree

2 large eggs

1 teaspoon vanilla extract

1/2 cup brewed espresso or strong coffee, cooled

1/2 cup milk (or non-dairy alternative)

1/2 cup chocolate chips (optional)

Whipped cream for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, spices (cinnamon, nutmeg, ginger, cloves), and salt. Set aside.

      Mix Wet Ingredients: In another bowl, combine the granulated sugar, brown sugar, and melted butter. Mix until well combined. Add the pumpkin puree, eggs, vanilla extract, cooled espresso, and milk. Whisk until smooth.

        Combine Mixtures: Gently fold the wet ingredients into the dry ingredients using a spatula or wooden spoon. Be careful not to overmix; a few lumps are okay. If desired, fold in the chocolate chips for an extra treat.

          Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

            Bake: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
