8 oz (225g) penne pasta

2 boneless, skinless chicken breasts, cubed

2 cups broccoli florets

3 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup grated Parmesan cheese

1 cup chicken broth

1 teaspoon lemon juice (optional)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. During the last 2 minutes of cooking, add the broccoli florets to the pot. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the cubed chicken breast and season with salt, pepper, and Italian seasoning. Sauté until the chicken is cooked through and no longer pink in the center, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant. Careful not to burn the garlic! Pour in the chicken broth and bring to a slight simmer. Allow it to reduce slightly for about 2-3 minutes.

        Combine Everything: Return the cooked chicken to the skillet, along with the drained pasta and broccoli. Toss everything together gently to combine. If the mixture seems dry, you can add a little more chicken broth.

          Finish and Serve: Sprinkle the grated Parmesan cheese and add lemon juice if using. Toss until the cheese is melted and everything is well-coated. Taste and adjust seasoning as desired.

            Garnish & Enjoy: Serve immediately while hot. You can garnish with additional Parmesan or a sprinkle of red pepper flakes for extra flavor.
