4 large eggs

1/4 cup milk

1/2 cup shredded cheddar cheese

1/2 cup cooked and crumbled breakfast sausage (or a vegetarian alternative)

1/4 cup diced bell pepper (any color)

1/4 cup diced onion

4 whole wheat or flour tortillas

1/2 avocado, sliced

1/4 cup salsa (your choice of mild or spicy)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Prep the Filling: In a medium bowl, whisk together the eggs and milk. Season with salt and pepper. Set aside.

    Cook the Vegetables: In a skillet over medium heat, add a splash of oil and sauté the diced onion and bell pepper for about 3-4 minutes until softened but still crisp. Remove from the skillet and set aside.

      Scramble the Eggs: In the same skillet, pour in the egg mixture and cook, stirring gently, until the eggs are softly scrambled and just set. This should take about 3-5 minutes.

        Combine Ingredients: Once the eggs are done, add the cooked sausage, sautéed vegetables, and cheddar cheese to the skillet. Stir well until everything is heated through and the cheese is melted.

          Assemble the Burrito: Lay a tortilla flat on a plate. Spoon a generous portion of the egg filling onto the center of each tortilla. Top with sliced avocado and a spoonful of salsa.
