Ingredients

1 cup fresh raspberries (plus more for garnish)

2 tablespoons honey or maple syrup

1 cup cream cheese, softened

1/2 cup Greek yogurt

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs (about 6 full sheets)

2 tablespoons unsalted butter, melted

1/4 teaspoon cinnamon (optional)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Raspberry Sauce: In a small saucepan over medium heat, combine the fresh raspberries and honey or maple syrup. Cook for about 5-7 minutes, stirring gently until the raspberries break down and the mixture thickens slightly. Remove from heat and let cool.

Make the Cheesecake Filling: In a mixing bowl, beat together the softened cream cheese, Greek yogurt, powdered sugar, and vanilla extract. Mix until smooth and creamy with no lumps.

Prepare the Crust: In another bowl, combine the graham cracker crumbs, melted butter, and cinnamon (if using). Mix until the crumbs are evenly coated with butter.

Layer the Parfaits: In a clear glass or jar, start with a layer of the graham cracker mixture (about 2 tablespoons), followed by a layer of the cheesecake filling (about 3 tablespoons), and then a layer of the raspberry sauce (about 2 tablespoons). Repeat until the glasses are filled, finishing with a layer of raspberry sauce on top.

Garnish and Chill: Top each parfait with a few fresh raspberries and a sprig of mint leaves for an added touch. Cover and refrigerate for at least 1 hour to allow the layers to set.

Serve: Once chilled, serve the parfaits cold as a delightful dessert.
