Ingredients

1 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cup fresh raspberries (or frozen, thawed and drained)

Optional: a sprinkle of sea salt for finishing

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream Butter and Sugars: In a large bowl, using an electric mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.

Fold in Chocolate and Raspberries: Gently fold in the chocolate chips and fresh raspberries, being careful not to break the raspberries too much.

Scoop Cookies: Using a cookie scoop or a tablespoon, drop rounded dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

Optional Sprinkle: If desired, sprinkle a tiny pinch of sea salt on top of each cookie before baking.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers might look a bit underbaked, but they will firm up as they cool.

Cool Down: Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.

Prep Time: 15 minutes | Total Time: 27 minutes | Servings: About 24 cookies
