Ingredients

For the crust:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1/2 cup granulated sugar

1/4 cup brown sugar

1 teaspoon vanilla extract

2 large eggs

1 cup smooth peanut butter

1 cup crushed Butterfinger bars (about 4 full-sized bars)

For the topping:

1/2 cup chopped Reese's Peanut Butter Cups

1/2 cup chocolate chips

1/4 cup heavy cream

Instructions

Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter. Press the mixture firmly into the bottom of a greased 9x13-inch baking pan to form an even layer. Bake for about 8-10 minutes until set, then allow to cool.

Make the cheesecake filling: In a large mixing bowl, beat softened cream cheese, granulated sugar, brown sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Gradually blend in the peanut butter until fully incorporated. Gently fold in the crushed Butterfinger bars.

Combine and bake: Pour the cheesecake filling over the cooled crust, spreading it out evenly. Bake for 30-35 minutes, or until the center is set with a slight jiggle. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight for best results.

Prepare the topping: In a small saucepan over low heat, combine chocolate chips and heavy cream. Stir until smooth and glossy. Remove from heat and allow to cool slightly.

Assemble the bars: Once the cheesecake has chilled and set, drizzle the chocolate ganache over the top. Then sprinkle the chopped Reese's Peanut Butter Cups on top of the ganache for extra crunch and peanut butter goodness.

Serve: Cut into bars, serve chilled, and enjoy the delightful layers of peanut butter and chocolate deliciousness!
