2 large cucumbers, diced

3 medium ripe tomatoes, diced

1 small red onion, thinly sliced

1 bell pepper (red or yellow), diced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon honey or maple syrup

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the diced cucumbers, tomatoes, red onion, and bell pepper.

    Add the chopped parsley and feta cheese if using. Gently toss the ingredients to mix them well.

      In a small bowl, whisk together the olive oil, red wine vinegar, honey (or maple syrup), salt, and pepper until well combined.
