For the crust:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup unsalted butter, softened

1 teaspoon vanilla extract

¼ teaspoon salt

For the rhubarb filling:

2 cups rhubarb, chopped into small pieces

1 cup granulated sugar

2 tablespoons cornstarch

½ teaspoon vanilla extract

1 tablespoon lemon juice

1 large egg

For the topping:

¼ cup all-purpose flour

¼ cup rolled oats

¼ cup brown sugar, packed

1 teaspoon ground cinnamon

3 tablespoons unsalted butter, melted

Pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish and set aside.

    Make the Crust: In a mixing bowl, combine 1 ½ cups flour, ½ cup granulated sugar, ½ cup softened butter, 1 teaspoon vanilla extract, and ¼ teaspoon salt. Mix until the dough is crumbly but holds together. Press the mixture into the bottom of the prepared baking dish evenly. Bake in the preheated oven for 15 minutes, until lightly golden.

      Prepare the Rhubarb Filling: In a large mixing bowl, combine the chopped rhubarb, 1 cup sugar, 2 tablespoons cornstarch, ½ teaspoon vanilla extract, and lemon juice. Stir in 1 beaten egg until everything is well mixed. Pour this filling over the pre-baked crust.

        Make the Topping: In a separate bowl, combine ¼ cup flour, rolled oats, brown sugar, cinnamon, melted butter, and a pinch of salt. Mix until crumbly. Sprinkle the topping evenly over the rhubarb filling.

          Bake the Bars: Bake the entire dish in the oven for an additional 25-30 minutes, or until the rhubarb filling is bubbly and the topping is golden brown.
