2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (adjust to taste)

1 can (14 oz) diced tomatoes

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup fresh spinach, chopped

1 can (15 oz) cannellini beans, rinsed and drained

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Sauté the Aromatics: In a large soup pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are soft and the onions are translucent.
