Ingredients

2 cups raw almonds

1 cup granulated sugar

2 tablespoons ground cinnamon

1/4 teaspoon salt

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup water (or enough to coat)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Almond Coating: In a medium bowl, combine granulated sugar, ground cinnamon, and salt. Mix until well combined and set aside.

Coat the Almonds: In another large bowl, combine the melted butter and vanilla extract. Add the raw almonds to this mixture. Stir until all the almonds are evenly coated with the butter and vanilla. Gradually add water to the bowl, stirring until the almonds are nicely coated (you may not need the entire 1/2 cup).

Coat with Sugar Mixture: Slowly sprinkle the cinnamon-sugar mix over the coated almonds, stirring continuously to ensure all are well-coated.

Roast the Almonds: Transfer the coated almonds to the prepared baking sheet, spreading them out in a single layer. Bake in the preheated oven for 15-20 minutes, stirring every 5 minutes to ensure they roast evenly. Watch closely to avoid burning!

Cool Down: Once they are golden brown and fragrant, remove from the oven and let them cool on the baking sheet for about 10 minutes. As they cool, they will harden and become crunchy.

Store and Enjoy: Once completely cooled, you can store your homemade roasted cinnamon sugar almonds in an airtight container at room temperature for up to 2 weeks. Perfect for snacking, gifting, or adding to salads and desserts!
