Roasted Garlic and Herb Chicken Thighs

6 bone-in, skin-on chicken thighs

1 head of garlic

1/4 cup olive oil

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)

1 tablespoon fresh parsley, chopped

Zest of 1 lemon

Juice of 1 lemon

Salt and freshly cracked black pepper, to taste

Optional: Lemon wedges, for serving

Preheat Oven: Start by preheating your oven to 425°F (220°C) to ensure it’s hot when you’re ready to roast the chicken.

    Prepare Garlic: Slice the top off the head of garlic to expose the individual cloves. Drizzle 1 tablespoon of olive oil over the exposed cloves, then wrap the head of garlic in aluminum foil. Set aside.

      Make Herb Mixture: In a medium bowl, combine the remaining olive oil, chopped rosemary, thyme, parsley, lemon zest, lemon juice, salt, and freshly cracked black pepper. Mix until well combined.

        Season Chicken: Pat the chicken thighs dry with paper towels. Place them in a large bowl and pour the herb mixture over the thighs, ensuring they are evenly coated. Massage the seasoning into the meat, making sure to get under the skin too for extra flavor.

          Arrange Chicken: Place the chicken thighs skin-side up on a large baking sheet or in a roasting pan. Add the wrapped garlic bulb to the pan.

            Roast Chicken: Place the pan in the preheated oven and let it roast for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy. You can uncover the garlic after about 25 minutes to allow it to roast and caramelize fully.

              Rest and Serve: Once done, remove the chicken from the oven and let it rest for about 5 minutes. Carefully unwrap the garlic (it will be hot!) and squeeze the cloves out from their skins. Serve the chicken thighs with a drizzle of the roasted garlic squeezed over them and a side of lemon wedges for an extra zesty punch.
