1 lb (450g) fresh potato gnocchi

6 cloves of garlic, unpeeled

3 tablespoons extra virgin olive oil

1 teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons unsalted butter

2 tablespoons fresh parsley, chopped (for garnish)

Freshly grated lemon zest (optional, for a pop of flavor)

Instructions
 

Prep the Garlic: Preheat your oven to 400°F (200°C). Place the unpeeled garlic cloves on a small piece of aluminum foil, drizzle with 1 tablespoon of olive oil, and wrap tightly to create a pouch.

    Roast the Garlic: Place the garlic pouch directly on the oven rack and roast for about 20-25 minutes, or until the cloves are soft and golden. Once roasted, allow them to cool slightly before squeezing out the soft garlic into a bowl.

      Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions or until they float to the top (usually about 2-3 minutes). Drain and set aside.

        Sauté the Gnocchi: In a large skillet over medium heat, heat the remaining 2 tablespoons of olive oil with the unsalted butter. Once hot, add the boiled gnocchi to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until they are golden brown and crisp on the outside.

          Add Garlic and Seasoning: Once the gnocchi are nicely browned, add the roasted garlic, salt, and black pepper. Gently mix until the garlic is evenly distributed.

            Incorporate Parmesan: Reduce the heat to low and sprinkle the grated Parmesan over the gnocchi. Toss gently to melt the cheese and allow it to coat the gnocchi evenly.
