4 medium-sized russet potatoes

1/2 cup grated Parmesan cheese

4 cloves of garlic, minced

3 tablespoons olive oil

1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped)

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: Wash and scrub the potatoes thoroughly. Using a sharp knife or a mandoline slicer, slice the potatoes into thin, even rounds (about 1/8 inch thick). Place the slices in a large bowl of cold water to prevent browning.

      Make Garlic Oil: In a small saucepan over low heat, combine the olive oil and minced garlic. Sauté the garlic for about 2-3 minutes until it becomes fragrant but not browned. Remove from heat and let it cool slightly.

        Season the Potatoes: Drain the potato slices and pat them dry with a clean kitchen towel. In a large mixing bowl, toss the potato slices with the garlic oil, dried rosemary, dried thyme, salt, and pepper. Ensure each slice is evenly coated.

          Layer the Stacks: Stack 3-4 potato slices at a time, placing about 1 tablespoon of grated Parmesan cheese between the layers. Once you have a stack, carefully arrange it upright on the prepared baking sheet. Repeat this process until all potato slices are used.

            Bake: Bake the potato stacks in the preheated oven for 25-30 minutes or until they are golden brown and crispy on the outside. You may rotate the baking sheet halfway through for even browning.
