1 cup roasted red peppers (jarred or homemade, drained if jarred)

1 cup feta cheese, crumbled

1/4 cup cream cheese, softened

2 tablespoons extra virgin olive oil

1 tablespoon lemon juice (freshly squeezed)

1 garlic clove, minced

1/4 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Pita chips or fresh vegetables (for serving)

Preheat the Oven (if using homemade peppers): If you are roasting your own red peppers, preheat your oven to 450°F (230°C). Place whole bell peppers on a baking sheet and roast for 25-30 minutes until the skins are blistered and charred. Remove from oven, cover with foil, and let steam for 10 minutes. Peel the skins off and let cool, then chop.

    Blend the Ingredients: In a food processor, combine the roasted red peppers, crumbled feta cheese, softened cream cheese, olive oil, lemon juice, minced garlic, and smoked paprika. Blend until smooth and creamy.
