Ingredients

2 medium-sized roasted red peppers (jarred or homemade)

1 cup crumbled feta cheese

1/2 cup cream cheese, softened

1/4 cup Greek yogurt

2 cloves garlic, minced

1 tablespoon lemon juice

1 tablespoon olive oil

1/2 teaspoon smoked paprika (optional, for extra flavor)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Roasted Peppers: If using jarred roasted red peppers, drain them well. If using fresh peppers, roast them until the skins are blistered, then cool, peel, and remove the seeds.

Blend the Ingredients: In a food processor, combine the roasted red peppers, crumbled feta cheese, softened cream cheese, Greek yogurt, minced garlic, lemon juice, and olive oil.

Season the Mixture: Add the smoked paprika, salt, and black pepper to taste. Blend the mixture until smooth and creamy. You may need to scrape down the sides of the bowl to ensure everything is well combined.

Taste and Adjust: Once blended, taste the dip and adjust the seasonings if needed. If you prefer a thinner consistency, add a splash of olive oil or a little more Greek yogurt.

Chill and Serve: Transfer the dip to a serving bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld together.

Garnish: Just before serving, garnish with chopped fresh parsley for a pop of color and freshness.

Enjoy: Serve this delicious dip with pita chips, crusty bread, fresh vegetables, or as a spread on sandwiches.
