2 large red bell peppers

1 cup crumbled feta cheese

1/2 cup cream cheese, softened

1/4 cup Greek yogurt

2 tablespoons olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Pita chips or fresh veggies, for serving

Roast the Peppers: Preheat your oven to 450°F (230°C). Place the red bell peppers directly on the oven rack or on a baking sheet. Roast for about 25-30 minutes, turning occasionally, until the skin is charred and blistered. Remove from the oven and place the peppers in a bowl; cover with plastic wrap for about 10-15 minutes to steam, making the skins easier to peel off.

    Prepare the Dip Base: While the peppers are steaming, combine the cream cheese, Greek yogurt, and olive oil in a mixing bowl. Use a hand mixer or a whisk to blend these ingredients until smooth and creamy.

      Peel and Blend: Once the peppers have cooled slightly, peel off the skins and remove the seeds. Roughly chop the roasted peppers and add them to the cream cheese mixture along with the crumbled feta, lemon juice, minced garlic, smoked paprika, salt, and pepper.
