2 lbs ripe tomatoes, halved

1 medium onion, chopped

4 cloves garlic, unpeeled

3 tbsp olive oil

Salt and pepper to taste

1 tsp dried oregano

2 cups vegetable broth

1 cup fresh basil leaves, packed

1 tbsp balsamic vinegar

½ cup heavy cream (optional for richness)

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare the Vegetables: On a large baking sheet, place the halved tomatoes cut-side up, scatter the chopped onion around, and add the unpeeled garlic bulbs. Drizzle everything with olive oil and season with salt, pepper, and dried oregano.

      Roast the Vegetables: Roast in the preheated oven for about 25-30 minutes, or until the tomatoes are caramelized and slightly charred. The garlic should be fragrant and the garlic skins wrinkled.

        Blend the Soup: Once roasted, let the vegetables cool slightly. Squeeze the roasted garlic out of its skins and add all the vegetables to a blender or food processor. Include the fresh basil leaves. Pour in the vegetable broth and blend until smooth.

          Heat the Soup: Transfer the blended mixture to a saucepan over medium heat. Stir in the balsamic vinegar, and if using, pour in the heavy cream for extra richness. Warm the soup through, and taste for seasoning, adjusting with salt and pepper as needed.
