2 pounds ripe tomatoes, halved

1 medium onion, chopped

4 cloves garlic, peeled

3 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 teaspoon dried oregano

1 teaspoon balsamic vinegar

2 cups vegetable broth (or chicken broth)

1 cup fresh basil leaves, plus extra for garnish

1 cup heavy cream (optional, for a creamier soup)

Crusty bread or croutons, for serving

Instructions
 

Prep the Tomatoes: Preheat your oven to 400°F (200°C). Place the halved tomatoes, chopped onion, and garlic cloves on a large baking sheet. Drizzle with 2 tablespoons of olive oil, and season with salt, pepper, and dried oregano. Toss to coat.

    Roast the Vegetables: Roast the tomatoes in the preheated oven for about 25-30 minutes, or until the tomatoes are caramelized and the onions are slightly browned, stirring halfway through.

      Blend the Mix: Once roasted, remove the baking sheet from the oven. Transfer the roasted vegetables to a large pot and add the vegetable broth and balsamic vinegar. Bring the mixture to a simmer over medium heat.

        Add Fresh Basil: Stir in the fresh basil leaves and let the soup simmer for another 10 minutes to meld the flavors together.

          Puree the Soup: Using an immersion blender (or a regular blender in batches), carefully puree the soup until smooth. If you prefer a chunkier texture, blend it less.
