1.5 lbs sirloin steak, cut into 1-inch cubes

1/4 cup olive oil

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

1 teaspoon dried oregano

1 tablespoon balsamic vinegar

1 tablespoon lemon juice

Salt and pepper to taste

1 bell pepper (red or yellow), cut into 1-inch squares

1 red onion, cut into wedges

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions
 

Prepare Marinade: In a medium bowl, whisk together the olive oil, minced garlic, chopped rosemary, dried oregano, balsamic vinegar, lemon juice, salt, and pepper until well combined.

    Marinate the Steak: Place the cubed sirloin steak in a large zip-lock bag or a shallow dish. Pour the marinade over the steak, ensuring all the pieces are well coated. Seal the bag or cover the dish with plastic wrap and marinate in the refrigerator for at least 1 hour, or up to 8 hours for more intense flavor.

      Preheat Grill: Preheat your grill to medium-high heat. If using gas, allow it to reach about 400°F (200°C).

        Assemble Kebabs: Thread the marinated steak cubes, bell pepper squares, and red onion wedges onto the skewers, alternating between the meat and vegetables. Leave a little space between pieces to ensure even cooking.

          Grill the Kebabs: Place the skewers on the grill. Cook for about 8-10 minutes, flipping occasionally, until the steak is cooked to your preferred doneness (medium-rare to medium is usually recommended at internal temperatures of 130°F to 145°F).

            Rest and Serve: Once done, remove the kebabs from the grill and let them rest for about 5 minutes. This allows the juices to redistribute.
