12 oz rotini pasta

1 can (10 oz) Rotel tomatoes with green chilies, undrained

1 lb ground beef or turkey

1 medium onion, chopped

2 cloves garlic, minced

1 packet taco seasoning

1 cup shredded cheddar cheese

1 cup cream cheese, softened

1 cup corn (frozen or canned, drained)

1/2 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Lime wedges (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package directions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet, heat a drizzle of oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2 minutes until fragrant. Add the ground beef or turkey, cooking until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

      Add Flavor: Stir in the taco seasoning, followed by the undrained Rotel tomatoes. Cook for an additional 3-5 minutes, allowing the flavors to meld.
